Old Fashioned Caramel Popcorn

Monday, October 31st, 2011

“If there’s something strange in your neighborhood …
If there’s something weird and it don’t look good ”
Don’t call Ghostbusters, treat them to a serving of  Caramel Popcorn!

Caramel Popcorn

14 cups popped popcorn

2 cups brown sugar, packed

1 cup butter

1/2 cup light corn syrup

1 tsp salt

1 tsp baking soda

Place popped corn in buttered oven-proof pan and keep warm in 200 degree oven.   Combine brown sugar, butter, corn syrup and salt in large saucepan.  Bring to a boil, stirring occasionally.  Boil, without stirring 5 minutes.  Remove mixture from heat and add baking soda (candy will foam).  Stir well.  One cup peanuts can be added to mixture, then  pour mixture over popped corn and toss with buttered forks to distribute evenly.  Spread onto two ungreased baking sheets.  Bake at 200 degrees  one hour, stirring every 15 minutes.  Cool completely, break into clusters and store tightly covered.  Enjoy!

Happy Halloween,

Terry

Caramel Apple Delight

Thursday, October 27th, 2011

Don’t you love fall, I do!  It’s Apple Month,  Caramel Month and Popcorn Poppin’ Month … and best of all the beginning of holiday baking and entertaining!  Here is one of our most-requested recipes, it tastes like caramel apples but easier:

Caramel Apple Delight

1 8 oz package cream cheese, softened

1/3 cup brown sugar

1 tsp Watkins Original Double Strength Vanilla

1/2 tsp Watkins Caramel Extract

apples, cored and sliced

Blend first four ingredients with mixer, serve with apple slices.  To keep apple slices from turning brown, dip them in lemon or orange juice first.

Bon appetit,

Terry
