Watkins Potato Salad

6 unpeeled medium potatoes
3 tbsp/45 mL white vinegar
2/3 cup/160 mL mayonnaise
2-1/2 tsp/12.5 mL Watkins Gourmet Potato Salad Seasoning

Boil potatoes in salted water until barely tender; drain and cool. Peel and cube or dice. Add vinegar; toss lightly and allow to marinate 30 minutes. Add remaining ingredients. Toss gently but thoroughly. Chill until serving time.

Makes 4 servings.

Relax and enjoy an All-American Classic, Home-Made Root Beer Floats:

Watkins Homemade Root Beer/Root Beer Float
Start by making a concentrated root beer syrup:

1-3/4 cups/425 mL sugar
2-1/4 cups/560 mL water
2 tbsp/30 mL Watkins Root Beer Extract
Root Beer Syrup: Combine sugar and water in small saucepan; heat and stir until mixture starts to boil. Remove from heat and cool to room temperature; add Root Beer Extract and mix thoroughly. Place in well-sealed container and keep in refrigerator.

Root Beer: Place 1/3 cup/80 mL of the syrup into a glass. Add 5 fl. oz./150 mL of club soda or sparkling water. Fill glass with ice. Enjoy!

Note: This makes a light colored root beer. If desired, you can add liquid caramel color.

Root Beer Float: Float a scoop of vanilla ice cream in a mug of root beer.

Tossed Salad with Raspberry-Vanilla Vinaigrette

Tossed Salad with Raspberry-Vanilla Vinaigrette

1/3 cup/80 mL Original Grapeseed Oil
1/4 cup/60 mL white wine vinegar
2-1/2 tbsp/37.5 mL sugar
2 tsp/10 mL Original Double-Strength Vanilla
1/2 tsp/2.5 mL Raspberry Extract
1/2 tsp/2.5 mL prepared mustard
Combine all ingredients; mix well and chill until serving time.

8 cups/2 L mixed fresh greens (red leaf lettuce, escarole, radicchio, etc.)
1 small red onion, thinly sliced
1 cucumber, thinly sliced
1 cup/250 mL alfalfa sprouts
Shredded carrot, if desired
To taste, freshly-ground Coarse Sea Salt
To taste, Black Pepper

Wash greens and tear into bite-sized pieces. Place in a bowl and
toss. Add onion and cucumber slices, alfalfa sprouts and carrot.
Toss with vinaigrette. Season with salt and pepper.
