Watkins Pumpkin Spiced Latte

Watkins Pumpkin Spiced Latte

1 1/2 cups milk

1 1/2 teaspoon Watkins Pumpkin Spice Extract

2 teaspoons Watkins Pure Vanilla Extract

2 teaspoons sugar (to taste)

1/4 cup of espresso or 1/2 cup

strong brewed coffee

whipped topping

Watkins Pumpkin Spice for garnish (optional)

In a small pan combine milk, pumpkin spice extract, vanilla and cook on medium heat, whisking until boiling.

Remove from heat. Pour into two mugs, add the hot espresso or coffee, and top with whipped cream and a dash of pumpkin pie spice on top.

Watkins Hummingbird Cake

Watkins Hummingbird Cake

3 cups all-purpose flour

2 cups sugar

1 tsp baking soda

1 tsp salt

1 tsp Watkins Pure Ground Cinnamon

3 eggs, beaten

1 cup vegetable oil

1-1/2 tsp Watkins Pure Vanilla Extract

1 tsp Watkins Butter Extract

1 can (8 oz/227 g) crushed pineapple, undrained

1 cup chopped pecans

2 cups chopped bananas

Frosting

1 package (8 oz) cream cheese, softened

1/2 cup butter or margarine, softened

3-1/2 cups powdered sugar

1 tsp Watkins Pure Vanilla Extract

Cake: Combine flour and next four ingredients in large bowl; mix well. Stir in eggs, oil and extracts; stir until dry ingredients are moistened—do not beat. Fold in crushed pineapple, pecans, and bananas. Spoon batter into three greased and floured 9-inch round cake pans. Bake at 350°F for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire rack 20 minutes, remove from pans and cool completely. Spread frosting between layers, on top, and sides of cake. Sprinkle with chopped pecans. Refrigerate at least 24 hours before serving; the flavors will blend and intensify upon standing.

Frosting: Combine cream cheese and butter, beating until smooth. Add powdered sugar and extract; beat until light and fluffy.

Makes 12 servings.

Watkins Pina Colada Cake

Let’s celebrate the end of September – here’s one last tropical recipe before the weather changes and Fall baking starts.coconut dessert mix

1 package 2 layer white cake mix

1/2 cup Watkins Coconut Dessert Mix

1/2 cup sugar

4 eggs

2/3 cup water

1/4 cup cooking oil

1 1/4 teaspoon Watkins Rum Extract

Blend all ingredients for 4 minutes at medium speed.  Pour into 2 greased and floured 9 in round pans.  Bake at 350 degrees for 25 to 30 minutes.  Cool and frost with Pineapple-Rum frosting.  Makes 16 servings.

Pineapple-Rum Frosting

1/2 cup Watkins Coconut Dessert Mix

1/2 cup sugar

1 1/2 cup milk, divided

1 can (8ox) crushed pineapple, drained

1 1/4 teaspoon Watkins Rum Extract

1 8 ounce container frozen whipped topping, thawed

Combine dessert mix and sugar.  Add 1/2 cup milk and stir until sugar is dissolved.  Add remaining 1 cup mild.  Cook, stirring constatnly, until mixture comes to a boil.  Pudding will be very thick.  Cool, add drained pineapple and rum extract, fold in thawed whipped topping.

Blend all ingredients for 4 minutes at medium speed.  Pour into 2 greased and floured 9 in round pans.  Bake at 350 degrees for 25 to 30 minutes.  Cool and frost with Pineapple-Rum frosting.  Makes 16 servings.
