Watkins Peppermint Chocolate Cake

2 cups sugar

1-3/4 cups all-purpose flour

3/4 cup baking cocoa

1-1/2 teaspoons baking soda

1-1/2 teaspoons baking powder

1 teaspoon salt

1 cup milk

1/2 cup Watkins Grapeseed Oil, Original Flavor

2 eggs

2 teaspoons Watkins Pure Vanilla Extract

1 teaspoon Watkins Pure Peppermint Extract

1 cup boiling water

Filling

2 cups heavy whipping cream

1/4 cup confectioners’ sugar

1 teaspoon Watkins Pure Vanilla Extract

2 drops red food coloring, optional

2/3 cup crushed peppermint candy, divided

Glaze

2 tablespoons butter

2 tablespoons baking cocoa

2 tablespoons water

1/2 teaspoon Watkins Pure Vanilla Extract

1 cup confectioners’ sugar

In a bowl, combine dry ingredients. Add milk, oil, eggs and extracts; beat at medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into three greased and floured 9-in. round baking pans.

Bake at 350° for 18-23 minutes or until cake tests done. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For filling, beat cream until soft peaks form. Add the sugar, vanilla and food coloring if desired; beat until stiff peaks form. Set aside about 1 tablespoon crushed candy. Fold remaining candy into cream mixture. Spread between layers and around sides but not over the top.

For glaze, melt butter in a saucepan over low heat. Add cocoa and water; cook, stirring constantly, until slightly thickened. Remove from the heat; whisk in vanilla. Gradually blend in sugar until smooth. Add additional water if necessary. Spread over top of cake. Sprinkle with reserved candy. Chill before serving. Store in the refrigerator. Yield: 12-16 servings.

Watkins Lemony – Pecan Loaf

1/2 cup butter, softened
1-1/2 cups sugar, divided
2 eggs
1 tsp. Watkins Pure Lemon Extract
2 cups all-purpose flour
1 tsp. Baking Powder
1/2 tsp. salt
3/4 cup sour cream
1 cup chopped pecans, toasted
1 T. Watkins Lemon Peel
1/4 cup lemon juice

In a large bowl, cream butter and 1 cup sugar until light and fluffy.  Add eggs and lemon extract; mix well. Combine the flour, baking powder and salt; add to creamed mixture alternately with sour cream. Fold in pecans and lemon peel.

Transfer to a prepared 9 x 5 x 3 in loaf pan (sprayed with Watkins Cooking Spray).  Bake at 350 degrees for 50 to 60 minutes or until a toothpick inserted near the center comes out clean.  In a small saucepan, combine lemon juice and remaining sugar.  Cook and stir over medium heath until sugar is dissolved.  Pour over warm bread.  Cool completely on a wire rack before removing from pan.

Watkins Almond Bars

4 eggs

2 cups sugar

1 cup melted butter

2 cups all-purpose flour

1 1/2 teaspoons Watkins Pure Almond Extract

Confectioners’ sugar

In a mixing bowl, beat the eggs and sugar until lemon-colored.  Add the butter, flour and Watkins Pure Almond Extract, mix well.  Spread into a greased 13 x 9 inch baking pan.  Bake at 325 degrees for 30 – 35 minutes or until a toothpick comes out clean in the center.  Cool on wire rack.  Sprinkle with confectioners’ sugar, cut and serve.
